Green Garlic are thin, green stalks that range in height from 20-45 centimeters. The stalks have small, cylindrical to globular white bulbs at the base and the bulb size varies depending on the variety.
Green Garlic contains Vitamin C, Vitamin B6, and Manganese. It also contains some Calcium and Phosphorus. Green Garlic can be used in both raw and cooked applications such as braising, sautéing, grilling, roasting, or prepared confit as a whole vegetable. Popular raw preparations include salads, compound butter, hummus, pesto, dressings, and other savory sauces.
